HOMESTEAD HOW-TO
– 1 stick butter – 1 ½ cups brown sugar – 1 teaspoon vanilla extract – 1 teaspoon almond extract – 1 egg + 1 egg yolk – 1 cup finely grated carrots – 1 ½ cups all purpose flour – ½ teaspoon ginger – ½ teaspoon cinnamon – ½ teaspoon salt – ½ cup pecans, chopped
Preheat the oven to 350°F and line a 9×9-inch baking dish with parchment paper. and melt the butter on the stove or in the microwave. In a mixing bowl, combine the melted butter, brown sugar, vanilla, and almond extract. Whisk until smooth.
Add the egg and egg yolk, whisking until fully blended.
1. Fold in the grated carrots until combined.
Add the flour, cinnamon, nutmeg, ginger, and salt to the mixture. Using a rubber spatula, fold everything together until the ingredients are fully incorporated.
Gently fold in the chopped pecans and pour the batter into the prepared baking dish and spread it evenly.
