Peel the ginger and either grate or slice it thinly.

Spread the grated or sliced ginger evenly on a prepared baking tray.

Set your oven to the lowest possible temperature and place the tray on the lowest rack. Allow the ginger to dry for about 2.5 hours or until it becomes dry and brittle.

Once the ginger is fully dried, please place it in a coffee grinder. Pulse the grinder 3 to 4 times, then continue grinding until you have a fine powder.

Sift the powder through a fine sieve, collecting any larger pieces.

Return those to the grinder and repeat the process until everything is finely ground.
